Forest honey, or honeydew honey, is a rare and exceptional type of honey that bees make from the excrement of insects, such as aphids, on deciduous and coniferous trees. This honey is characterized by its dark color, rich and complex taste and aroma. It contains a high proportion of bioactive compounds that have antibacterial and anti-inflammatory effects, support the digestive system and provide powerful antioxidants. Honeysuckle honey is also suitable for allergy sufferers and asthmatics, as it contains a minimal amount of pollen and is less prone to crystallization.
